Balsamic vinegar of Modena - Aceto Balsamico di Modena is a less costly type of vinegar as the industrial processes are used to produce a product that in flavor intensity will never match the traditional one.

One should use the type of balsamic vinegar which fits the dish, so for the salad dressing there is little need to use the expensive product. On the other hand, a drizzle of the aged balsamic vinegar on a fruit dessert can make it something special.
