Most sauces popular in Spain originated in a region of Spain and then spread throughout the country.

The list of popular Spanish sauces includes:

  • Alioli – garlic sauce made with olive oil and egg yolk
  • Mayonesa – just olive oil with egg and a bit of lemon juice, made fresh before use
  • Marinera – fish stock based sauce with wine
  • Picada – sauce with olive oil, garlic, toasted almonds or hazelnuts
  • Romesco – sauce on tomato basis with almonds or hazelnuts and roasted bell pepper
  • Sofrito - sauce made by cooking tomatoes, garlic, onion, bell peppers in olive oil, with seasoning
  • Verde – olive oil based sauce with parsley, garlic and white wine
  • Vinagreta – olive oil with vinegar and herbs
