Patatas Bravas or "fierce patatoes" is a very popular in Spain appetizer, also used as tapas - potatoes fried in oil with spicy tomato sauce.

Ingredients

100 ml olive oil extra virgin
1 onion, chopped
clove garlic, peeled
1 dried chili
2 teaspoons  paprika
7.05 oz. boneless Serrano ham, in one piece
2 teaspoons flour
5 tomatoes, peeled and cut into eighths
1 teaspoon sugar
2-4 tbsp. white wine
large potatoes, peeled and cut into 0.8 inch
for frying oil
to taste salt

Preparations

  • In a large pot heat the olive oil. Add the onion, garlic, chili and ham. Cook for 10 minutes, stirring constantly. 
  • Add the paprika and flour. Stir and fry for a minute, being careful not to burn flour.
  • Add tomato, salt and sugar. Simmer for about 10 minutes. Remove ham and set aside.
  • For the sauce, add the wine. Blend on smoothly (using a hand blender or food processor). Ready sauce aside. 
  • Strongly heat the oil in a large pot or fryer (up to a temperature of about 356 degrees F., can not smoke!). 
  • Fry the potatoes until golden brown. Remove from oil, drain in a basket, and then on a paper towel. 
  • Sprinkle with salt and immediately serve with tomato sauce.
