Catalan cuisine

Catalonia in Spain as it has its own culture, it has also its own cuisine. The Catalan cuisine is based on ingredients typical for the Mediterranean region, such as tomato, garlic, eggplant, peppers, bread, pasta, olive oil, wine, beans, mushrooms, different types of cheese and meat, and many types of fish.
A good example is the Catalan dish called escalivada made of different roasted and peeled vegetables, typically tomatoes, eggplants, peppers, onions and garlic, brushed with olive oil and salt sprinkled. Anchovy fillets make a good addition to this. Typically served warm or room temperature with crusty bread.
